Organic Norwegian Smoked Salmon

Ingredients

  • 140g Fumara Organic Norwegian salmon
  • 4 chard leaves
  • 1 Avocado
  • Olive oil and salt to taste
  • 1 tbp Lemon juice
  • 100g Mix sesame/pumpkin/poppy/chia seeds
  • A generous spoonful of Honey

Cooking Process

  • Blanch the chard leaves in salted water for 20 seconds, cool in ice water, lay them on a sheet of baking paper dipping them in a little jelly, let them cool.
  • Blend ripe avocado with a dash of lemon juice, olive oil, salt and pepper and gradually add water to make a creamy mixture.
  • Lightly toast a mix of sesame/ pumpkin/poppy and chia seeds in the oven.
  • Make a square with the chard leaves and place on a plate, stick the seeds on top using a little honey then top with the salmon and a spoonful of avocado mousse.
