Organic Norwegian Smoked Salmon

Ingredients
- 140g Fumara Organic Norwegian salmon
- 4 chard leaves
- 1 Avocado
- Olive oil and salt to taste
- 1 tbp Lemon juice
- 100g Mix sesame/pumpkin/poppy/chia seeds
- A generous spoonful of Honey
Cooking Process
- Blanch the chard leaves in salted water for 20 seconds, cool in ice water, lay them on a sheet of baking paper dipping them in a little jelly, let them cool.
- Blend ripe avocado with a dash of lemon juice, olive oil, salt and pepper and gradually add water to make a creamy mixture.
- Lightly toast a mix of sesame/ pumpkin/poppy and chia seeds in the oven.
- Make a square with the chard leaves and place on a plate, stick the seeds on top using a little honey then top with the salmon and a spoonful of avocado mousse.
